What vanilla ice cream dessert that is now always topped with hot, thick, velvety chocolate sauce originally consisted of white ingredients only (almond ice cream, white peaches, white currants, etc.) and possibly got its name from a French comic opera by F.A. Boieldieu which was much admired by the legendary French cook Auguste Escoffier?

Well done. That's indeed the one and only true "dame blanche" recipe. But in Belgium they switched on to a white-and-brown concoction, not bad, but no longer the genuine Escoffier invention.

A famous French chef and founding father of French cuisine invented an icecream for which almond icecream was combined with white currants, lemon sherbet, and half a peach. He gave it the name of a 19th century French opera that was famous at the time. Later the white topping was replaced by a brown chocolate sauce, which made the name a little irrelevant and absurd. What was the name of the opera and who was this superstar among French cooks?

What is the difference between vanilla ice cream and French vanilla ice cream?

Well over a century ago a piano keyboard was developed that provided the same "shape" for all triads rather than the white-white-white, white-black-white, black-white-black, black-black-black, black-white-white, and white-black-black major triads of the standard keyboard. (Got that? :P) Who designed it, and what is its other big advantage?
