    		Bulk container shipments of pistachio nuts are prone to self heating and spontaneous combustion because of their high fat and low water content.

    		I do not know if this link is true but is says it could be a danger of Salmonella poisoning. I will check further.

    Here is another site that says that large quantities more easily leads to spoiling. It also has much more info than I would ever want to know.
