This site shows a good number of three wheeled vehicles in production or planned for the future and both styles of the single wheel in the front or the back exist. As to which style would be more stable that would most likely depend on the terrain the vehicle was built for.

Most three wheel cars built so far have been 1 at front, 2 at back. These are/were saloon type vehicles with low performance http://en.wikipedia.org/wiki/Reliant_regal for example. Driven at any speed on bends they are not particularly stable. On the other hand, if you are looking for performance without carrying more than one passenger, 2 at front 1 at back is far more stable. See http://en.wikipedia.org/wiki/Morgan_Motor_Company for examples. It's almost impossible to overturn a Morgan three wheeler (and rather hard to overturn their four wheelers too... ). The two wheels for steering gives better handling and grip on bends. 1 at the front can give incredible turning circles, but stability is not usually present - even in the ground level Bonds (but they beat the Reliant three wheeler cars for stability hands down.
