What is the "technical term" for misspellings such as mispell for misspell, Missippi for Mississippi and probly for probably?

You may be thinking of "syncope," but that refers to pronunciation rather than spelling.
"In phonology, syncope (pronounced /ˈsɪŋkəpiː/, Greek syn- + kopein “to strike”) is the loss of one or more sounds from the interior of a word; especially, the loss of an unstressed vowel."

I was thinking of a term in -logy or -graphy. Metaplasm may be correct too.
As far as I see syncope would not apply to MissiSIpi.
