The Postclassical Era refers to the period of time that immediately followed the Classical Era. During the years in between 500 and 1453 CE.
The Postclassical Era is the period of Western history following the fall of the great classical empires in the Mediterranean region. This period is more commonly known as the Middle Ages.

In that link why under it does it say 500-1000CE?

Because it's from Wikipedia, and users can add information.
Notice the subtitle, "High Postclassical Period." Someone has referred to a textbook entitled "Traditions and Encounters."

Many authorities call this span the Early Middle Ages.

The original author of the Wikipedia article had given the dates 500-1453, corresponding to the period from the fall of Rome (Really 476 but rounded to 500.) to the fall of Constantinople. As serpa noted, it's customary to refer to those years as the Middle Ages.
No great cosmic being blows whistles to neatly divide history into quarters or periods; historians, in retrospect, note important events and trends and group them meaningfully. They don't always agree.
