    Well, according to this article, the recipe was created by Caroline and Stephanie Tatin in Sologne. At the end of the XIX(19th) century, Caroline would cook for hunters who spent the weekend at Sologne, apparently she got distracted by all the clients and she accidently put the apples first in the mold than the pastry.
