The Koine Greek language which was the common language throughout the Roman Empire at the time the New Testament was written. Most likely all original manuscripts were written in Koine Greek.

Well, it's possible that we'll never know about some of the original manuscripts. Given that in some passages (most notably in the Gospels), a lot of the linguistic structure is modeled on or identical to biblical Hebrew, some people have come to the conclusion that some of those passages were written in Hebrew or Aramaic. When I was in high school philosophy class back in Israel, among the texts we read were certain passages from the Gospel (to compare with Jewish philosophy), in Hebrew, called "revised" rather than "translated" texts, on the assumption that most of the passages we were reading were originally in Hebrew and only later translated to Greek for the general Christian populace.
