Cynically, "because they can be". Many people want a personalised cake for their 'special day', and anything that is designed for you and then produced as a one-off is going to be expensive. If you're happy to go with a simple sponge or fruitcake with generic decorations, it will cost significantly less tha a designer model, but is still a labor-intensive product.
