Vlaggetjesdag means Flag Day, but it is quite different from America’s Flag Day. Dutch Flag Day celebrates the arrival of the first herring of the season.
The first herring of the season is known as Hollandse nieuwe, groene haring or maatjesharing. From 12 June, fishmongers are allowed to advertise this fish using one of these three names which indicates that the herring is still young. This salty delicacy can be savoured at any herring cart. Fork out €1.80, coat the herring with chopped onions, hold the fish by the tail, tilt your head and lower the entire fish into your mouth.
The first herring of the season is soft-pink inside and melts on the tongue. Herring is preserved in salt and eaten raw.
