As the idiom says, you should always dot the i's and cross the t's. However for two words in the English language (over 6 letters in length), depending on whether you dot or cross gives two different words. What are they?

Baiting/Batting is the correct answer. Well done!
It is probably the longest two words in the Engligh language that it counts.
P.S. Flutier is not in all dictionaries as it is quite obscure.

How can you cross an 'i' and change it into a 't'? What am I not understanding?

suppose you draw an i, without the dot so you end up with a sort of hook.
Then you can either put a tittle on top of the hook to make an "i" or draw a small line through it to make the shape of a "t"
