    'devil' is intended to mean spiciness and such
    so it's deviled because of the mustard and paprika and whatever else you use to
    spice 'em up.

    At www.ott.igs.net/caroline/pollo2.htm you can find 'pollo al diavolo'. Couldn't the popular Italian phrase 'al diavolo' for 'highly seasoned' be the source for the name of this egg recipe?
