Like any product, it takes time to catch on. In 1897, a manufacturer of cough syrup conceived the idea of adding flavor to powdered gelatin. Orator Francis Woodward bought the idea in 1902 and began manufacturing Jell-O in several different flavors. By 1904, sales had become respectable.
