    How do they decide whether a steak is Prime or Choice?

    		The difference between Prime, choice (and indeed the lower grades (Select and Standard) is the amount of marbling - intra-muscular fat - that the cut has. Prime has "abundant", whereas Choice has small/modest/ moderate amounts. The two lower grades have hardly any. Note that this is only one criterion to judge the quality of beef
