John Glenn was the oldest of the Mercury Seven (b. 7-18-1921), so he was the oldest to fly a Mercury mission.

After going through the Wikipedia pages for all 16 Gemini astronauts, Wally Schirra (b. 3-12-1923) was the oldest Gemini (and also Apollo) astronaut.
