    Will even a small amount of heat burn off the alcohol when cooking with wine or other spirits?

    It takes 2 1/2 hours of baking cooking time on items that the alcohol has been mixed into to get the alcohol level down to 5%. Alcohol that has been added to boiling liquid and removed from heat retains 85% of the alcohol.
