How many ways can a NFL defense score?

Let's see off the top of my head, they can intercept a pass and return it for a touchdown. If the team on offense is called for holding while the quarterback is in the endzone the defense is credited a safety. The defense sacks the quartback in the endzone is a safety. Any member of the offense steps out the back( or side) of the endzone with the ball in there possession thats a safety. Defense recovers the football in the endzone. Defense can block and return a fieldgoal/punt attempt and return it for a touchdown. So my answer is 6.

Could they also pick up a fumble by the offense and run it in for a touchdown?

The defense can score by fumble recovery(and a run to the end zone), interception(and run back to the end zone)and safety(tackle the offensive player with the ball in the end zone.
Defensive Special Teams can score by recovering an untouched kick off in the end zone. Recover a blocked punt(and run it back to the end zone). Block a field goal attempt (and run it back to the end zone).
