I believe that the five rings on the Olympic flag stand for the five continents of Europe, Asia, Africa, Australia and America. Is this correct and where could I find confirmation?

Your supposition is confirmed in such books as the Guinness Guide to the Olympics. The colours do not represent skin colours (as per some dubious sources) but supposedly every flag of member nations contains at least one of the colours

It refers to the colors that every nation has on their national flag. "These five rings represent the five parts of the world which now are won over to Olympism and willing to accept healthy competition." Those words stated from Pierre de Coubertin 1913.
"The Olympic flag has a white background, with five interlaced rings in the centre: blue, yellow, black, green and red. This design is symbolic; it represents the five continents of the world, united by Olympism, while the six colours are those that appear on all the national flags of the world at the present time." (1931) Textes choisis II, p.470.
