Since I am a bookkeeper and well trained in accounting, I can tell you the answer in Canada anyway, is shrinkage. It may be different in other countries, but it is the correct term according to GAAP. (Generally accepted accounting principles)

I work in Finance and have some accountancy training, and can confirm the the term shrinkage is the correct word in the UK.
