Is pork really a white meat or is poultry the only 'white meat'?

Question #1981. Asked by millie. (Apr 23 00 9:34 PM)

Chicken and turkey are classified as white meat, beef, lamb and pork are classified as red meat. Pork is identified in the food animal arena as a 'red meat.' However, the term 'white meat' comes from the very successful advertising campaign of the National Pork Producers Council (NPPC) on 'PORK: The Other White Meat.'

A newer definition in the United States emphasizes not the appearance and strength of taste, but the fat content, making "white meat" synonymous with "lean meat"; traditionally "white" meats such as lamb and veal are reclassified as "red". Sometimes, even fish and seafood, including fatty and dark-fleshed fishes such as salmon, mackerel, and tuna, may be considered "white meat".

Given nutritional concerns, meat producers are eager to have their products considered as "white", and the United States National Pork Board has positioned pork as "the other white meat", alongside poultry; however, meats which are red when raw and turn white on cooking, like pork, are categorized by the United States Department of Agriculture as red meats.

Overheard at a barbecue: Mr. Harold said, "Gee, Mr. Chef is really keeping the grill very hot. Searing the meat may be good for something, but certainly not for locking in moisture." Are they correct? If so, what good purpose does meat searing serve?
