Is 'Nacho cheese' a legitimate cheese, or is it only used in snack chips?

Judging by the numbers of recipes obtained by a straight search for 'Nacho cheese' I'd say it was a legitimate one.

There is no such thing as Nacho cheese. There is no region in France, for instance, that specializes in the cultivation of Nacho. You won't go to a dinner party and find a lovely baked Nacho next to the crudites and crab puffs. Nacho cheese is a creamy, delicious blend of fourteen types of cheese-flavoured chemicals and three cheese-coloured dyes. Its unique consistency is obtained by copious quantites of paraffin, human earwax, and old 'Vinyl Repair' kits. And when dropped from eight stories, it makes one hell of a mess. I think that the avi or quick time files available show just that.

Nacho cheese is derived from the side dish or snack 'Nachos.'
Nachos have become very popular in the last decade or so, around these parts anyway. The basic recipe is corn chips sprinkled with tomato and chili salsa and grated cheese, usually cheddar, it is then heated or broiled until the cheese is melted. Serve with sour cream and you have your basic nachos. Nacho cheese is really melted cheese and salsa mixed together. You can buy it like that or make it yourself. I make it myself because it is less expensive and I can control the spiciness.
