    Tonight, I am cooking something that properly requires an ingredient dating back centuries in one country, though a region of another country has a closely-related name for it. In that first nation, its name has become an insult, possibly derived from a mildly-pejorative term in a third country, while the dish I am making is associated with a specific region in yet a fourth nation.
