Encyclopaedia Britannica says the following: 'In rabbinic literature Lilith is variously depicted as the mother of Adam's demonic offspring following his separation from Eve or as his first wife, who left him because of their incompatibility.' Rabbinic literature is the literature of the Jewish Rabbis, but it doesn't say which documents.

'The Alphabet of Ben Sira' is said to be the first Jewish work to portray Lilith as Adam's wife. See http://ccat.sas.upenn.edu/~humm/Topics/Lilith/alphabet.html Many websites say that Lilith is similarly described in the Talmud, the Midrash and cabbalistic writings, but it's not easy to get any exact 'chapter and verse'.
