It depends what you are describing. Hispanic means pertaning to Spain and Spanish-speaking peoples. Latino would refer specifically to Latin American people who might speak Portuguese etc.

Both are correct terms. As mibmob said, Hispanic refers to anyone who speaks Spanish as their native language. However, Latino simply refers to the male part of that population. Latina would refer to the female part.
