Hey SOTHC, when a finger is placed in a foaming glass of beer it will cause the 'head' to settle down. Why?

I had not heard of this before so I decided to put it to the test. Unfortunately the guy whose beer it was, took a dislike to my finger and the rest of my anatomy and I was unable to complete the experiment, but did manage to break the record for the 3000 metres. I shall report back when I have found a seven stone weakling who has just ordered a pint.

Sorry to be serious in answering this question amongst the frivolous banter! Fingers and other parts of the body are covered with a thin coat of body oils. Whenever an oily component is added to beer, its surface tension is altered, and bubbles tend to collapse. Found it on the web...
