Piloncillo is produced by boiling down sugar cane juice in an iron kettle to form a molasses laden sugar which resembles fudge that is placed into the familiar shaped moulds. http://www.angelfire.com/ia2/barony/newsletter/oct2001.html Piloncillo is an unrefined sugar from Mexico( Photograph) The name piloncillo refers to the traditional cone shape in which the sugar is produced. It is also know as panela and panocha. There are actually two varieties of piloncillo produced one is lighter (blanco) and one darker (oscuro).
