Why do some peppers taste mild and sweet, while other peppers intensly burn your mouth for hours?

Chilli peppers contain various levels of a substance called capsaicin,and it is the amount of this which determines a chilli's heat. One book I have tells me that this heat is guaged in Scoville units. Sweet peppers contain none, whereas the powerful habanero chillis can contain up to 300,000!
