As a Sassenach, I hesitate to contribute to this thread. But I think the haggis should be accompanied with tatties and neeps (potatoes and turnips), and that Burns's Selkirk Grace should be said before the meal: 'There's some hae meat and canna eat, And some wad eat that want {it;} But we hae meat and we can eat And sae the Lord be thankit' or something like that. I think Burns's Address to the Haggis ('Fair fa' your honest sonsie face, great chieftain o' the pudding race') sometimes figures in the ceremony too.

You don't have to come from Scotland to enjoy Burns Night, cocomojoe - although I'm sure they would disagree! I believe everyone should experience at least one in their lives. It can be quite moving when the lights go out and then the piper makes his entrance followed by a flaming haggis. Sadly, my composure falls apart when the poem is addressed to the haggis (probably have to be Scots to fully appreciate that!!) The haggis consists of unspeakable bits and the neeps are grim - and if you don't care for the taste of the real stuff, there is always 'Southern Comfort' a drink made in heaven - It's a great fun night - do try and find one, you'll be glad you did!
