Scrapple is boiled, ground leftover pieces of pig, together with cornmeal and spices. Good scrapple, particularly served with a spicy tomato catsup, is food for the gods. Scrapple is a Pennsylvania Dutch food, and whatever your opinion of it might be...it is very popular in the Philadelphia area. I think its darn good! And if you think strange leftover bits of meat go into make it (which they do), what do you think goes into hotdogs?
