Nitrates are created by the action of the lightning on the nitrogen, oxygen and water in the air, or so I was taught as a kid. They might do it differently nowadays. Nitric acid would be produced which would react with something in the ground to form the nitrates.. I've always thought that it would only increase the fertility of the soil by a miniscule amount, and couldn't see why they were bothering to mention it.
