    Why do maple trees produce syrup?

    		They don't - any more than sugar cane and sugar beet produce sugar. In the case of the maple and sugar cane, it's the sap of the plant that just happens to be very nice after a bit of processing. The sap is what carries the nutrients from the roots to the rest of the plant - something like the blood in animals. Some plants, euphorbias for example, produce extremely nasty sap, and others produce useful but inedible sap like rubber trees.

    		Maple syrup is sap that has been refined and produced. Most maple syrups that are used on pancakes are probaly not the same stuff that came in its original state from the tree.
