In the case of George VI, who succeeded to the throne upon the wrenching abdication of Edward VIII, the decision was taken purely and simply on the grounds that 'King Albert I' would be too much novelty and change on top of the catastrophe of the abdication. According to Brewer's British Royalty Albert Frederick Arthur George simply chose to use his last name and therefore became George VI.
