When is it grammatically correct to use an ampersand rather than the word 'and'?

I think the question is one of style rather than grammar. The ampersand (originally a fancy form of the Latin word 'et') represents the word 'and', just as '1st' represents 'first' and 'Xmas' represents 'Christmas'. If it is grammatically correct to use the word 'and' in a particular case, the grammar is not affected by the use of an alternative form or 'abbreviation' of the word. Stylistically, however, I think most people would probably prefer to see 'and' written out in full, especially in a printed work.
