Jelly is made from just the juice of the berry or fruit. Jam is made with the pulp included. Preserves are made with part of the berry or fruit included in the mixture. You can find a recipe for these in a cookbook.

mochyn says: Jelly has different meanings in different parts of the world. If you mean the US word there is no difference except maybe the amount of sugar and fruit content.
