Native American Indians used to tap hard rock maple tree sap in earliest Spring. They boiled the sap, testing it for hardness by spilling a little on the snow--'candy'. They kept some as syrup and boiled the rest down to a maple 'sugar'. (Our white sugar comes from beets and sugar cane, which the Indians did not grow.)
