I just checked out this book called Their Finest Hour by Churchill and it's about World War II, yet when I was researching Winston Churchill online, I found sites that listed all the books he wrote and I don't see this one. Can anyone clear this up?

"Their Finest Hour" is definitely a genuine work by Sir Winston Churchill. Maybe your sites treated Churchill's "The Second World War" as a single work. But each of its six volumes has a title of its own, and "Their Finest Hour" is Volume 2. The others are:
1. The Gathering Storm.
3. The Grand Alliance.
4. The Hinge of Fate.
5. Closing the Ring.
6. Triumph and Tragedy.
You can check this at various booksellers' sites, e.g.
