    19th-century barkeeepers used to put out small containers of the ground spice for customers to sprinkle in their beer (supposedly the origin of ginger ale). The best ginger is a pale, buff-colored rhizome grown in Jamaica, and it was used in the time of Henry VIII to combat the plague.
