The first to go out on 17th December 1989 was "Simpsons roasting on an open fire" although the Simpsons first appeared as part of the Tracy Ullman show on 19th April 1987.

...and wasn't "Some Enchanted Evening" the first episode made?

I was right. "Some Enchanted Evening" has episode number 7G01. "Simpsons Roasting On An Open Fire" has episode number 7G08 and was the 8th to be made. It was the first whole episode to be shown because it was Christmas (December 12th 1989) when they started broadcasting them.
