Why does eating a spoonful of something sweet stop hiccups?

Because you think it will. Just like drinking water upside down or from the wrong side of the glass, or scaring someone, etc. There is no scientific reason why any of these things should work except that you think they will.

What DOES work (I didn't believe it at first) is holding your breath until you feel like you can't anymore. (Breathe all the way in.)

TheAlphaWolf is right. Breathing into a paper bag also works, as does drinking a (large) glass of water, assuming that you do not inhale in between sips. Successful methods involve building up carbon dioxide.
The success of other methods, such as popping balloons, dropping cold keys down the back, and eating a spoonful of something sweet is merely coincidental.
