Why is it that motels contain Holy Bibles, but most hotels don't? Why is a Christian Bible in the motel in the first place? Why not a Torah instead?

Have a look at the "FAQ" section of the following site. The Gideons International organisation distributes copies of The Bible widely to hotels and motels among other places.

The Gideons have even placed a bible in the waiting room at my dentist. They don't limit themselves to motels and hotels.

The Gideons do this all by themselves. It is my understanding that hotel/motel owners can choose wheter or not to place the Bible there. The bibles are all purchased through donations and private funds. I'm not a Christian, but I respect the work that the Gideons do, they have conviction.

Whether or not a hotel or motel includes a bible in each room is entirely up to the individual owner or franchise chain. Since the Gideons provide them free of charge, most properties put them in the rooms.
The following link explains briefly and simply who the Gideons are and how they got started.

This is a volunteer association whose overhead expenses are run solely on the members’ dues, and the expenses of the Bibles are from donations from people all over the world. Its National Headquarters in Nashville is over 100 years old. There are around 170,000 Gideons and auxiliaries in the world. The man is called a Gideon, and his wife is called an auxilliary.
