Why do Nintendo superheroes Mario and Luigi have plumber occupations? Didn't the creators feel this would "downplay" their heroism? Plumbing is a noble occupation, don't get me wrong, but these are superheroes.

Mario and Luigi predate Nintendo. Mario first appeared in Donkey Kong (made by Coleco for ColecoVision and Atari), where he was a carpenter.
You see him again in Donkey Kong Jr., also by Coleco for ColecoVision and Atari. Then again, with, for the first time, his brother Luigi, in Mario Bros., made by Nintendo for Atari. (Pre Nintedo Entertainment System.) During THIS game, Mario decides to find a new line of work, and he and his brother become plumbers. Neither of them are superheros. The point of Mario Bros. was to exterminate the various critters residing the plumbing works.
In 1985, with the advent of Nintendo, we see SUPER Mario Bros., where the duo is transported to the Mushroom Kingdom and has to rescue the Princess Toadstool. I suppose at this point they might be considered "Super" heros, what with the title and all.
The plumbing aspect I think was a means to an end, as the basis for the Mario Bros. game. Don't ask me why Mario started out as a carpenter.

Mario and Luigi have Plumber occupations because Nintendo decided it would fit with the fact why Mario and Luigi go through pipes to go to other worlds or other parts of worlds.
