Israel was the name given to Jacob in Genesis 32:28 - "Thy name shall be called no more Jacob, but Israel: for as a prince hast thou power with God and with men, and hast prevailed."

Or to quote Tim Rice: "Jacob was the founder of a whole new nation, thanks to the number of children he had. He was also known as Israel but most of the time, his sons and his wives used to call him Dad."
