In baseball, what is a ball that hits the foul pole called?

It's a fair ball because like the bases and the home plate the entire foul pole is in fair territory. A ball is foul when it is outside of the pole. If it nicks it in any spot it's a fair ball. If the ball comes off the bat and bounces off home plate it is also fair for the same reason.

It's called a home run if it hits on the fly, a ground-rule double if it hits on a bounce.

It is a fair ball; if it hits the foul pole on the fly, above the level of the fence (which should be where a painted yellow line is on the foul pole), and excluding any "special" home field ground rules, it is a fair ball and a home run!
