I believe the largest sapphire in the British Crown Jewels is Stuart Sapphire, set in the Imperial State Crown.
I don't know that the largest ruby has a name, though the two huge and famous "ruby's", the Black Princes Ruby (170 carats) in the Imperial State Crown and the Timur Ruby (325 carats), currently set in a necklace worn by Elizabeth II on occasions of state, are no more ruby than the Stars of Africa. They are, in fact, red spinel. I'm going to hazard a guess that the larges actual ruby in the royal crown jewels is probably the large ruby in Queen Victoria's coronation ring.

Forgive me, Queen Victoria's ring had a large sapphire and surrounding rubies. The ring with the large central ruby was made for her consort, Adelaide.

Yes, Lothruin, the Stuart sapphire is the sapphire I was looking for, though I can't seem to find a carat weight for it. It certainly appears to be so. Unless there is another not listed in the usual places.
I'm having trouble with my choice for the ruby; some sources say it's a crown jewel, while others say it belongs to another institution. So this is another question where I am asking for the answer, rather than giving it. Either your choice of the ruby in the ring of Queen Adelaide or the one set in the central front cross patee of the Imperial Crown of India would have to be my choices for indisputable examples.

Adelaid was not Queen Victoria's consort, Prince Albert was. Queen Adelaid was one of the Hanoverian's consort. George II perhaps.
