The OED says the origin is uncertain, but suggests a connection with a German card game “of considerable age” called poch or pochspiel. This game also involved betting on the value of hands. “Poch” is derived from “pochen,” meaning to knock or thump, and figuratively to boast or brag.

Poker players also knock or tap the table to "check", to signify that they are forgoing the opportunity to bet on that round but retaining the option of betting in a later round.
