From Middle English, from Old French estout, of Germanic origin.

Because it is the strongest porter (dark beer) that was referred to as 'stout (ie strong) porter'. Now it is just called stout, as in strong.
SM's grammatical explanation is also correct of course.

Originally porter came in three varieties: plain porter, stout porter and extra stout porter. Since only "extra stout" is now made (Guinness, Murphy, Beamish), they've dropped the name porter. Guinnness still says Extra Stout on the bottle.
