Why is alcohol used as an ingredient in flavoring extracts such as vanilla, almond, and hazelnut?

Usually, alcohol is used in the actual extraction. Without getting too technical, the alcohol is used to extract the flavorful oil. Therefore, it isn't exactly an ingredient, so much as a medium.

Despite exceeding sheepishness, acid plus alcohol equals ester plus water. Esterification has been known since biblical times.
