Is there a word for a string of more than two vowels which are pronounced together?

A three-vowel combination is called a triphthong. The analogical word for a greater number of vowels would be polyphthong, but this word isn't in the OED. Probably you don't often get more than three vowels combined in this way.

A triphthong is where there are three separate vowel sounds: it doesn't necessarily relate to how the word is written. For example, power has a triphthong in the middle (ah-oo-uh), although the letter w is not normally considered to be a vowel.
