In the year 1680, Hako Sushi was introduced to the people of Edo (present day Tokyo), and in 1779, Maki Sushi (rolled sushi) was invented. At this point, Nigiri Sushi (Edo style Sushi) or what is commonly known as Sushi in the United States was not yet available. It was in 1824 when a clever chef named Yohei Hanaya decided to forgo the fermentation process of fish and started serving fresh slices of fish placed on top of a pad of seasoned rice. The Edo style or Nigiri Sushi, literally meaning "grip" or "grasp," are morsels of rice topped with a variety of fish and other ingredients. Yohei's Sushi stand gained instant popularity throughout Edo, thus marking the birth of a new dining sensation, with its beginnings with the street vendors offering Sushi as casual snacks and finger food.

2)"The Japanese name "sushi" is written with kanji (Chinese Characters) for ancient Chinese dishes which bear little resemblance to today's sushi.
One of these kanji, "õl", might have been a salt pickled fish. The first use of "õl" appeared in the oldest Chinese dictionary Erya ( –ÑÅ) believed to be written around the 3rd century BC."
3) "in 2nd century AD, another character used to write "sushi", "õW" , appeared in another Chinese dictionary: "õW×ÒÒ² ÒÔ‰cÃ×á|Ö®¼ÓÈ{ Êì¶øÊ³Ö®Ò²", which translates as "õW×Ò is a food where fish is pickled by rice and salt, which is eaten when it is ready"
4) "The earliest reference to sushi in Japan appeared in 718 in the set of laws called Yororitsuryo (ðBÀÏÂÉÁî). "
