When potatoes become old they grow 'eyes.' I pluck the eyes off and cook and eat the potatoes anyway. Is this a safe practice, and how old must a potato be before it goes rotten?

So long as you don't eat green bits, the eyes themselves or black bits, you should be OK - as long as the potato is still firm. Discard to the compost heap when soft. Green is poisonous, black is rotten. If you dump waste potatoes into the compost, or plant them, you can get a small harvest later in the year. I recycle my waste potatoes this way, and get a nice bag of new spuds in September or so just by digging.

In England we plant potatoes and onions alternately. In times of drought the onions make the potatoes' eyes water which saves us from having to irrigate them so much.

You should try planting carrots with the onions and potatoes, it will keep the eyes healthier and they will water more.
