Technically, horses come in herds, but race horses in groups tend to be referred to as stables. This really refers to the owning / organising outfits, and of course comes from the dwelling place of the horses. They can form bunches, but these are temporary and jockeys can get into trouble for encouraging this, especially if a potentially more speedy horse is trapped inside against the rails!

What about a string of racehorses? Have I heard that expression somewhere or have I imagined it?

I know the collective term for thoroughbred race horses is called "Bloodstock". And a collective term for race horses lined up to race is called a "field".....but this could just be the gambler in me talking.
